Cook the Book: 'Olives and Oranges'

Book Cover The daughter of a foreign correspondent and the famed food authority Nancy Harmon Jenkins, Sara Jenkins, author (along with food writer Mindy Fox) of this week's Cook the Book selection, Olives & Oranges, spent her formative years caravanning around Europe absorbing local flavors and learning culinary traditions. By the time she was a teenager, Sara had lived in France, Lebanon, Spain, and Italy.

It is no surprise, then, that Sara's cooking—at such illustrious restaurants as 50 Carmine, Il Buco, and I Coppi—is as whimsical and improvised as it is rooted in Mediterranean traditions.

With Olives & Oranges, Jenkins builds on the "language of flavor" she learned along her travels. From classics such as Lemon Olive Oil Cake and Tuscan Eggplant Parmesan to modern dishes like Cantaloupe Gazpacho with Jamón Serrano and Grilled Mako Shark Skewers, her recipes demonstrate how to layer flavors to create spectacular meals using fresh, simple ingredients. In addition, she divulges her culinary tricks born from years of experience, such as always broiling fish skin side up to add a flavorful, crunchy element.

Fries... with truffle

Fries for sure! With mustard and mayo mixed together.

If you're talking Oklahoma hamburgers, or as I prefer to call them, a plate of preciousness, you don't need anything else. For deli sandwiches, that sour, mouth watering, crunchy, crispy, mouthwatering dill pickle.

the fries from the hospital cafeteria! somehow, they've managed to hit upon the formula for a fry with a light and crunchy exterior, and fluffy inside. i can eat these without ketchup!

That totally depends upon what kind of sandwich it is. For a grilled cheese, I like (duh) tomato soup, for a baguette with brie, apples, and honey I like red grapes. For just about anything else (chicken salad, egg salad, ham & cheese) some nice, crispy potato chips can't be beat. Utz please, or Martin's Kettle Chips if I'm willing to deal with the tummy ache later. (Although, I just had a bagel sandwich with hummus, cucumber, and sprouts and I'm thinking that chips would ruin the guilt-free feeling I'm currently enjoying...maybe I'll stick with the grapes for this one.)

I love French Fries! -- These days they are always oven-baked, and sometimes (well, almost always) NOT made from white potatoes, but still yummy, nonetheless.

It depends on the sandwich, of course. If it's a pita sandwich with falafel, it has to come with hummus, tahini sauce and fresh potato chips. If it's a pita sandwich with shawarma, it also needs to be topped with some oil & vinegar coleslaw (in addition to hummus, tahini and chips), and perhaps some sliced pickled gherkins. Pickled cucumbers and sliced red onions are a must on burgers. There can't be a cream cheese & lox sandwich without red onions a capers. I can go on for ages:-)

I need something sour and salty to go with my sandwich--so a pickle if I'm feeling virtuous, salt and vinegar chips if I'm not!

Pepperoncini are really good alongside a grilled cheese!

There is this little Greek restaurant down the street from my house and they make what they call "Greek Fries". It is really just fries tossed with oregano and lemon jouce. Those things just about go with anything.

This would depend on the sandwich. With pork I like a slaw. With most others I would probably go with some sort of chip, again, it depends. One thing you can depend on though I good beer will go with them all.

Gotta be fries. Always. Not always with garlic, though.

thinly sliced zucchini rounds, thinly sliced cucumber rounds, thinly sliced red onions with just a couple flakes of dried bhut jolokia peppers and enough greek yogurt to LIGHTLY cover the veggies. Yummy defined.

If I make the sammy ay home it's got to be chips because I like to put them inside my sammy and most restaurant chips are usually stale. If I eat out I order fries not trusting how long any coleslaw has sat around in a restaurant cooler.

A good pickle goes with almost any sandwich. But a sweet coleslaw is better with bbq. And burger demands fries, as does any sandwich with a deep fried filling.

To some extent, the answer might depend on the type of sandwich you're eating. Coleslaw with pulled pork, potato salad with most deli sandwiches, chips with tuna, a pickle with corned beef or pastrami... but aside from perhaps PB&J, I can't imagine any sandwich that doesn't pair well with fries!

I'm a sucker for tortilla chips, but if I'm being healthy, I love a good crunchy apple.

This is really a loaded question...

In general, and without knowing the specific sandwich, I'd tend to say fries work best. But, it depends on so many things. There are some sandwiches that really demand a cup of soup. I mean, hel-LO? A traditional grilled cheese sandwich without tomato soup on the side? I don't THINK so...

Fries in general, but soup definitely runs a very close second as the best sandwich accompaniment.
