Woo hoo! I just made some and it's in the fridge chilling!

I made a cupcake batter that looked like chocolate pudding but that doesn't count.

Heh, totally making some pudding now....though as I'm feeling lazy and it's really really hot (37c!) it's the quickie instant type. :P

Well ok then! I happen to have a couple of Jello chocolate pudding cups in my fridge! And now I have an excuse to eat one for dessert tonight! I love excuses...

i think I celebrated without even knowing, since i got some on sale last week (chocolate and buterscotch). But i will belatedly honor the holiday by remembering what my mom used to do with chocolate pudding. She never used instant, but stood there stirring like all amazing moms in the 50s who worked so hard to feed us and we took so much for granted. Mom used to make this wonderful sort of parfait - don't know where she ever got the idea but she layered chocolate pudding and graham crackers in the bowl. It was wonderful! Anyone else know that one?

Oh yeah, AND she used to make cupcakes, cut out a little upside-down cone and fill 'em with pudding and put the little cone/hat back on. Chocolate or lemon. Oh yum. Simple but fun huh?
