Blogwatch: Eggs Cooked in Muffin Tins
The blog Sweeetheart Fever posts about a novel way to cook eggs: bake them in muffin tins. If it weren't so hot out, I'd try it this week. I can imagine plunking one of this muffin-tin eggs on an English muffin with some good, sharp cheddar. Mmm.

Why not line the muffin tin with some parma ham or other ham? Top off with some cream, tabasco and/or grated parmesan.
Makes some awesome breakfast parcels that are bound to impress your breakfast guest(s)

These suggestions are delicious! I was pressed for time when I cooked the eggs above (work, work, work...sigh), but I'm definitely planning on makin' up some more this weekend when I have a little more time. I can't wait to include cheese/bread/sauces, etc.

Rachel Ray did "green eggs and ham" this way. The "green" is spinach and the "ham" is prosciuto, which forms the up in the bottom of the muffin tin:

Mark Bittman did a similar thing with eggs baked in a ramekin.

I'm not sure how "novel" this is. Ever look at the egg in an Egg McMuffin? I don't know what they use at McDonald's, but I bet it looks a lot like a muffin tin. And cheddar cheese, bacon or ham. I don't want to be a drag, but I think we're re-inventing a wheel here. My favorite always has been with sausage.

The Egg McMuffin is cooked on the griddle in a metal ring, not baked. You can create a functional home version of the ring by cutting out the top and bottom of a tuna fish can.
I've seen some interesting looking stuff using coffee mugs, both in the oven and in the microwave.

this would be good for an eggs benedict type of recipe. but this sounds similar to the mark bittman concept of eggs in a souffle dish. spring some olive oil, add some pancetta or proscuitto, some cheese, and plop an egg on top. it's delicious! and a great breakfast dish/appetizer.

I've been doing eggs in muffin tins for a while (check my favorite muffin tin egg recipe with asparagus, ramps, and bacon).
They're really easy and quick, and if you have a 6-cup tin, you could do them in the toaster oven to keep your kitchen relatively cool.

this sounds and looks so yummy and so many variations can be made. Breakfast, brunch or dinner. I think what isn't mentioned is this is made in a silicone muffin cup making preparation and clean up really easy and if needed can be cooked in the mircowave.

We learned this in middle school home ec -- in a pyrex ramekin with a little butter and (quelle horreure) Velveeta -- I did a lot of these after school in the toaster oven as a starving after-school teenager. We also used to get a less-appetizing version at summer camp that we called "hockey pucks" -- not so yum.
