Ice Cream Cupcakes

With highs in the 90s here in New York this weekend, Joy the Baker's ice cream cupcakes sound like the perfect antidote to long, hot lines for plates full of barbecue. [via Not Martha]

They look amazing! I might have to make these with brownie batter this weekend.

I make these, but upside down. I don't bother trying to make the 1/2 in deep cakes in the muffin tins (in my crappy apt. oven? ha.) plus the possible remove and trim etc...
I put my toppings in the bottom of of the cup, spoon in some fudge or other gooeyness that will firm up and trap the toppings. Then I top with ice cream and a circle of cake I cut from a sheet cake. Once frozen, I just slide a knife around the edge and they come out with the cake on the bottom.

I love (as does my DH) having cake scraps, and I use them for crumbs on other desserts. Ice-cream cake in any version...yumminess!

So much more delicious than ice cream cake. Cuter too.
