Cook the Book: The Splendid Table's How to Eat Supper

Book CoverAmerican Public Media's syndicated radio program The Splendid Table is like This American Life for foodies. Each week, award-winning host Lynne Rossetto Casper and producer Sally Swift lead their audience on an enlightening culinary journey from farm to store, kitchen to table. More than just a cooking show, The Splendid Table explores the relationship between food, culture, and politics, and introduces listeners to the people who are shaping our collective, contemporary appetites.

In their new cookbook, The Splendid Table's How to Eat Supper, Lynne and Sally offer up a collection of recipes for easy weeknight cooking that goes far beyond the standard repertoire of spaghetti marinara and tuna casserole. While the dishes are simple and homey (think sautéed chicken breasts and roast salmon), they are also innovative and unusual (classic vinaigrette made new with a hint of Asian fish sauce, Deviled Eggs browned in a pan to caramelize and crisp their filling).

Win 'The Splendid Table's How to Eat Supper'

Do you consider Ruth Rogers and Rose Gray mentors? And, if so, what was the thing you learned from them that has influenced your cooking the most?

Alton Brown - Don't you think that sometimes your "scientifically correct" methods are just a little over the top and not very practical?

I was going to say Alton Brown, but he will be too busy talking with all the other serious eaters. Instead, I would ask Andrew Zimmern how he finds the best versions of all the weird foods he eats and what sorts of dreadful illnesses he's gotten while taping his show.

Sadly, I probably wouldn't be able to hear his answer over the sound of how awesome he is.

Gordon Ramsay

What defect, deficiency, or malformation is it in our society that sees to it that I am not yet a celebrity chef who is worshiped like the culinary rock star I am?

Also, one for all Serious Eats posters: Is it my innate and seemingly unique inability to be sychophantic toward others chefs that makes me seem a jerk?

Or is it just that I am a jerk?

Either way, I would urge everyone to spend less time on the lauding of the branded chefs (however ultra-talented they may be) and more time seeking out and supporting the local talent.

My Dad, who died in 1990. He studied at Cordon Bleu, and was the best cook I have ever met. His favorite thing to cook and eat was red beans and fried potatoes.

John Currence. "How do you think you can best challenge a culinary audience and keep them engaged?"

Can I try some of that?

Ina Garten/Barefoot Contessa:

You and Jeffrey are too cute, since you don't have children, will you adopt me?

Martin Yan:
Will you adopt me?

Tactful_Cactus beat me to it.

So after she asks Sandra Lee "Why?" i think I'd need to follow that up with a "No, seriously, WHY?"

alton brown... why are you so weird?

Rose Levy Beranbaum

The house next door is for sale...would you consider re-locating so I can smell your wonderful cakes baking everyday?

Ina Garten

Ina Garten, the Barefoot Contessa

With your varied background, how did you learn to cook such wonderful dishes?

Sandra Lee-How can you wear white while cooking, and not get any of it on you!

No offense to your specialty--it's fabulous!

Gordon Ramsey: Is there a real softie underneath that crusty exterior?

Paula Deen

I would ask her how she overcame agoraphobia and also how she turned herself into a 20 mi dollar income.

Alton Brown - I would have so many questions!

Ina Garten. What is your favorite recipe?

Rachel Ray, what gave you the incentive to make a career out of cooking?

I actually listen to "Splendid Table" every week (although I have to podcast it now that NHPR took it off their lineup and put up that stupid show that's not about religion but is) and I love the call-in portion! I always pause the podcast after and think if I have any questions to ask her, but everyone else's questions are always so good (or.. on bad days, kinda repetative). But I think I would ask her to talk about Italy. She just went again, and did two shows on it, and they were sparkling, delightful narratives. I know there was more that must have been edited out, or thought not appealing for the wider audience. I could listen to Lynn describe sauces for DAYS on end!

Julia Child (who I will never forget towering over Emeril in Cooking with Master Chefs on PBS):

What was your most memorable food-related dinner party disaster.

(There has to be at least one, right?)

To Bob Kinkead:

Would you embrace or encourage a trend toward ethnic (e.g. South American) seafood-centric restaurants and, if so, what advice would you give to a person with a dream to own and operate such a place?

MFK Fisher - How embellished was your autobiographical writing? Did you blend several meals into one?

To Mollie Katzen:
I remember Moosewood's beginnings in Ithaca, and I'd love to hear how your cuisine evolved in collaboration with your customers and cooks. I think this must be like theater, an art form created with constant feedback from the audience and improvisation from the artists, and your musings on that would be a joy to hear.

Maida Heatter is my hero, I'd want to chat with her over some Palm Beach Brownies and just hear her life story.

Ramsey,

Why dont you do your show like the european. I like you better there than in the US. You seem more peersonal.

I would be tempted to ask the chef at Alto Cinco in Syracuse for the, now defunct (or so I hear), pre-Vegan cornbread recipe but it'd probably be better to save for later in the interview.

John Currence
Q. What's for lunch?

Julia Child. Julia, in all your years of cooking and instructing what is the one dish you never tried to cook but always wished you had?

Lidia Bastianich -
Any plans to open a new restaurant on the West Coast?

Alton Brown - How'd you get so fun?

Rick Bayless

"What was your first exposure to Mexican cuisine - the first dish you had -and were you an instant convert at that point or did you learn to love the food and the people?"

Gordon Ramsey ....................Why the yelling ?

Tyson Cole-How do you come up with your menu ideas?

I would ask Dorie Greenspan what her favorite parisian savory street food is? Excluding Bread and other baked goods.

Anthony Bourdain.
What was it that turned you around so you could take those "destructive" impulses and do something positive with them?

Rachael Ray

"How does it feel to have sold out your entire image to become a corporate shill for Nabisco and Dunkin Donuts?"

or

"What do Cusimano's feet taste like?"

I would like to interveiw Chef Jamie Gwen. The first question I would ask , since hers looks very nutrious is: Since the world is becoming more and more obese. Will she start using soy beans in her recipes. Please enter me, thank you

I would talk with Alton Brown about his video-shooting chops. More specifically, I would ask him how he 'constructs' the shots for a given show.

Rick Bayless -- is there any point to that pepper-roaster grill thing that I've seen on your show? Seems to me that roasting peppers right on the burners makes more sense, but I'm curious.

Alton Brown. Though I wouldn't ask a question - I'd tell him he needs to assert himself and procure some samples during Iron Chef America!

Anthony Bourdain- If you had to retire somewhere, what country would it be? What do you like best about their cuisine?

Barbara Kafka

Who invented pureed soup, anyway?

Gordon Ramsay - I have seen your BBC show the F-word, and I think it is remarkable how much your personality differs; the interactions with your interactions with your children and wife showcase a real caring parent and husband - even raising animals in your backyard with your children displays just to kill them shows a real humanitarian side. Your interactions that have made you so popular in the American media, however, are far less sensitive, so to speak. Do your children have exposure to these American media displays, and if so, how do you reinforce to them that this is just an act? Do your children see any of this side of you in your day-to-day activity?

Nancy Silverton- what's the secret recipe for the Mozza pizza dough?!

Chef Ramsay, I religously watch your show Kitchen Nightmares on BBCA and think that you are not only an impressive chef but a magnificent mentor who unselfishly shares your own experiences to help improve struggling restaurants. What is the best advice you have ever received from a mentor or a person of inspiration?

Paula Deen - What's your obsession with butter and sugar?

I would ask Rachel Ray what inspired her to get to where she is now.

I would ask Anthony Bourdain...
"What would you eat for you last meal?"

Paula Dean... she is my cooking hero!

I blogged your contest on prizeatron!
http://www.prizeatron.com

Paula Deen, I grew up in the Pee Dee area of South Carolina, and for big get togethers (Scouts, church suppers if it wasn't pot-luck) it was usually chicken bog. I KNOW they did not use sausage in it, but there was a great deal of pepper. It was NEVER baked. Can you help me make chicken bog the way its supposed to be? (Meaning, of course, the food of my childhood. Hey, ALL comfort food should be done that way!)

I would ask Alton Brown how to organize my pantry.

Anthony Bourdain - can you take me with you on vacation?

i'd ask Gordon Ramsey if he wants to make out.

Anthony bourdain: what made you want to travel and try the foods that you do, what made you so adventurous??

Gordon Ramsey-what's your favorite dish?

Michael Ruhlman:

Tell the truth - how many times have you had to slap Bourdain around?"

or Anthony Bourdain:

"How do you resist shaving Ruhlman's head ala Season 2 Top Chef?"

I would interview Duff Goldman from Ace of Cakes and ask him how he overcame his difficult teen years to become a successful chef and does he have any advice for teens who are struggleing.

i would interview martha stewart and i would ask her why she doesnt do anymore gardening on her show..i really miss that show marth stewart living show she had before she went to the big house :(

Paula Deen - Are the food/vacation specials you've done as fun as they look and where are you and your family going next?

Lets see, this question really has a few different answers. I would like to interview Alton Brown just because I love his show and want to see what he is like in real life. One of the most interesting people to interviews would be Paula Dean since she is such a character. Finally, if I had to pick someone purely on good looks (and probably good food too) I'd have to choose Giada De'Laurentes.

Rachel Ray
Is she ever unhappy?

Johnathan Gold: Where can I get good Mee Krob?
