'Top Chef': A New Kind of War
Looks like we've got a supersized hour-and-fifteen-minute episode this week called "Wedding Wars." So, before it even starts, we already know it's a group catering challenge. Right out of the gate, the eight remaining chefs head to the knife block and break out into two teams of four.
On Team Fork, we've got Antonia, Andrew, Richard, and Stephanie. (Lots of wins on that team.)
On Team Spoon, there's Dale, Lisa, Nikki, and Spike. (Lots of hats and bandanas on that team.)
And it makes sense that teams have formed because it's time for everyone's favorite the Quickfire Relay Race, with Tom Colicchio subbing in as referee and arbiter of relay hand-offs.

The four tasks that each team must complete: Peel and supreme five oranges, peel and turn 2 artichokes, clean and cut fillets from a whole monkfish, and make a quart of mayonnaise by hand.
Here are the matchups and who won each leg:
Antonia vs. Lisa in the orange leg: Lisa wins handily by at least two oranges.
Andrew vs. Spike in the artichoke leg: Andrew has more speed, less nerves, no hat, and a vegetable peeler. He crushes Spike by two oranges and it's a dead heat...
Richard vs. Dale in the monkfish leg: Both chefs look confident and capable. Dale gets dinged by his own teammates for "rough looking" fillets, but in the end his cuts are as acceptable as Richard's. It's still neck-and-neck going into the last round.
Stephanie vs. Nikki in the mayo round: Stephanie knows what it takes to get a mayonnaise to "break" whereas Nikki is in desperate need of a food processor. Stephanie pulls away easily and whips out more than a quart of artery-clogging goodness in what seems like no time flat.
After all was said and done, it was a pretty great 10 minutes. A lot of excitement. A lot of camaraderie, at least on the winning side.
At the Elimination Challenge, we learn that the teams will be competing in an update to the Top Chef staple "Restaurant Wars" -- much to the chagrin of the contestants, who all seem disappointed to miss that challenge. And, of course, their chagrin turns to dread when they learn that "Restaurant Wars" has been replaced by "Wedding Wars" -- where each team has less than 24 hours to cater 125 settings for a pair of wedding professionals who are getting married the very next day.
One team will cater, literally, to the whims of the bride and her guests, the other team tackling the tastes of the groom. The Fork squad, winners of the Quickfire challenge, get to choose which client they'd like to serve. Of course, they don't have much to go on, so it hardly seems like a major advantage. They pick the bride and the teams break and meet with their clients.
I have to make special note to a wonderful moment from the introduction of this challenge: As Padma announced that the chefs would need to work through the night, with cots to catch cat naps, Andrew announced "I've got a culinary boner right now." Wow. Game over. Winner. Best reality TV sound-bite of 2008.
On to Whole Foods and Restaurant Depot for $2,500 worth of shopping. Then, it's back to the Top Chef kitchen for the marathon cooking session.
The bride's crew -- Stephanie, Richard, Andrew, and Antonia -- definitely seem to have an easier time of things. Their planning is solid and tasks have been deftly assigned. The bride, who hails from the South, asked for a basic "meat and potatoes" menu, and specified that loves cake more than anything. The groom's side -- Nikki, Spike, Dale, and Lisa -- has been instructed to go with an Italian theme.
It's no surprise that 16 hours in the kitchen causes tempers to grow short and both teams see their reservoir of patience dwindle to dangerous levels. Dale's teammates are clearly happy to steer clear of him as he broods and busies himself with as many tasks as he can find.
The wedding itself looked like a really wonderful affair, and it seemed like there were no major snafus. Even the losing team put out food that many guests found enjoyable.
Fast-forward to the judges' table, where Tom and Padma are joined by Gail Simmons and Gale Gand, executive pastry chef from Chicago restaurant Tru. They try to pull a fast one and call out the Fork team -- Richard, Stephanie, Antonia, and Andrew -- under the guise of "asking about why they picked the bride?" Of course, everyone already knows that the first team called is the winner, especially the team left to stew in the kitchen.
When all the kudos are handed out, Stephanie is applauded for an impressive wedding cake, Richard's slow-cooked brisket gets honors, as does Antonia's appetizer-sized pizzas. Andrew is lucky that he found himself on the winning side, because no-one cared for his creamed spinach or his "crispy" chicken, which, just as Antonia predicted, didn't hold up under the pressures of pre-cooking and sitting around on a buffet.
On the other side of the axe, the Spoon crew nearly fell to pieces in front of the judge's table. Dale huffed and puffed and Spike told him he was being childish. Nikki stood up for herself by declaring that she wasn't the leader of the group, despite her expertise with Italian food. It was the "uh-oh" moment of the competition which solidified Nikki's status as a goner almost as much as Tom's curt dismissal of her hand-crafted Tortellini. Lisa largely sidestepped the conflagration as she was responsible for the well-liked, if not visually impressive, groom's chocolate-hazelnut cake.
After the team tore at each a little more awaiting the judges' final word on who would head home, it came as no surprise that non-team-leader Nikki was pointed back to Staten Island. On the upside, she seemed almost relieved to be heading somewhere, anywhere that wasn't across the counter from Dale, who has handily snatched the title of Most Annoying Chef from Spike. Way to go, Dale. You wear it well.

The show is seriously becoming Top Caterer.
Thanks for the recap. I haven't watched in weeks. But have been able to keep up through these posts.

Dale and Spike were so annoying, but Nikki really deserved to go home for not assuming leadership of that team.
That said, I thought Richard's giving Stephanie his "win" was an incredibily mature jesture. I've made wedding cakes before and know how much work goes into one. She deserved the win for that.
And, finally, I agree with wunami that (sadly) the show has become about catering this year, and not just straight-up cooking.
Anyone want to take a stab at the final three? --- I predict Richard and Stephanie, with either Dale, Antonia, or Lisa as the third. Spike needs to go next. What do you think???

i think you can narrow down the final 3 to richard for sure, probably stephanie, and either dale or antonia (i like her more each week). i'm just not 100% sold on lisa, i don't know why.

@j -- Lisa is a wildcard, to be sure. She can't even take criticism. Can you imagine the ugly scene there will be if she's eliminated? They'll have to give Padma hazard pay for that episode! LOL! So, maybe the judges will be intimidated into keeping her.
She makes Tiffany Faison (circa Season 1) look like Winnie the Pooh.

Richard is several lengths better than the anyone else, and anything less than a straight-up win for him would be a major disappointment.
Dale is very much a technician and a grinder. If he can calm down and just work, then he should make top-three. (He is fussy, but I think he's a pretty authentic representation of the average 20-something male cook in an upscale restaurant.)
Stephanie is so up and down each week that I have a hard time putting her in the top three--still, she's got decent technical skills and the smarts to keep her head down and cook.
Similarly, when Antonia is at her best she's great: a solid palate and enough raw skill to push through; but I leave some weeks being completely unconvinced.
Lisa is sort of the female equivalent of Dale, by and large she's "just a cook," but she's obviously worked in some very good kitchens and has learned enough party tricks to impress the judges on a regular basis (that bacon thing that impressed everyone, e.g.). Imagine how well she'd do if she could learn to season properly!
If I had to choose today, as much as she irritates me, I'd put Lisa at #3. And just imagine the drama of Dale and Lisa hurling fireballs while Richard rises to the top in the finale!

My top three will be Dale, Andrew and Richard.
I think Stephanie will make it to the top 4, but will be let go. Sadly, I'm not seeing anything impressive from the ladies this season. Lisa goes next. Both she and Antonia have yet to do anything really amazing or noteworthy.

@Brownie - Lisa will be the entertainer for sure. I'm not sure I would like to see her make it far, but for sure keep her on until the competition gets intense!

@hungrychristel -- Lisa is scary, that's a fact, and she and Dale may end up the Tracy and Hepburn of the season yet. But, I wince thinking about her elimination. They are gonna need a whip and a chair, and maybe a SWAT team that night.
@meganaw -- I can't believe you think Lisa is the next to go. As maxwell so astutely said upthread -- "Spike is a hack. No other comments needed." My hope is that Spike goes next. I'm hoping at least one of the finalists is a female. I think Stehanie could have the chops. And, as the weeks go by, I like Antonia more and more.

I'm hoping that we don't see another catering challenge until next season. I think Nikki probably was due to go, but I'm a bit tired of seeing people eliminated because they couldn't put on a buffet for 125 people in less than 36 hours while standing on one foot with no food processor or whatever. That tells me absolutely nothing about what it might be like to eat their food at their restaurant. There have been so many of these challenges this season that I still don't have a good idea of what kind of food some of these people actually cook when they're serving their customers back home. Perhaps next season they can just spin off 'Top Caterer' into its own show and let the chefs on Top Chef be chefs.

I think Dale was far from the most annoying contestant. He was placed in an untenable group of slackers and back-stabbers, in my opinion, and only tried to rescue a meal that was doomed. His frustration level was high, but, understandable, especially after extreme sleep deprivation, extreme work, and extremely annoying people. Lisa made a cool cake, but, her hateful disposition and greasy hair annoys me. Antonnia is cool but she tends to be very patronizing and while she shined in last week's challenge, she's not really shown herself to be extraordinary. Dale is a very outspoken and honest person who doesn't suffer fools gladly. I felt he deserved some credit for having to suffer through unbelievably selfish people who were only interested in themselves and their individual dishes, not caring about team work, and not caring about producing a quality menu for someone's wedding! Dale had the work ethic, and he's proven himself through the past episodes. I love Richard, and thought his gesture of bestowing the win on Stephanie was awesome, but, I think Dale would have performed brilliantly if given the chance to work with the bride team, not the bottom of the barrel of this season's remaining chefs. I'm sure they're all top chefs in their own way, but, there is no comparison between Nikki, Lisa, and Spike's attitudes and ostensible mediocrity to Dale. They are so threatened by his excellence that they literally shunned him and refused to treat him like a team member. I was thrilled that Nikki left. She should hang her head in shame. It was she who came out looking like a mug, after shouting out how cooking Italian and leading this mess had nothing to do with her. If their team had won by some miracle, she would have leaped into the center stage. There was a big contrast between the type of people they were compared to Andrew, Antonia, Stephanie and the lovable Richard.
All in all though, I thought it was an interesting show and one that we'll talk about in future seasons.

@ shell0724: I have to disgree about Dale. I think that he didn't "only try to rescue a meal that was doomed." He just tried to put his hand in a little bit of everything and I think that instead it appeared that this was his reasoning behind getting into so many different things was that to use that excuse that he did so much so the judges would keep him around. Nothing he did was great. He did a lot of things mediocore. Like its been said before, I think its worse to do a bunch of things at a so-so level than a few at a great level. I think that's why Spike was saved (by the chilean sea bass). I can't disagree with the choice to eliminate Nikki at all but I think that Dale is real close to the chopping block and has become exactly what Spike called him....to put it politely.

@ zekks: The reason Dale was doing everything was because there was no leadership, which Nikki should have assumed since she has the most experience with Italian cooking. She should have set a tone with a menu and split up the responsibilities accordingly. Fish rots at the head. And I loved how she had the audacity to say she wasn't leading the sinking ship. Nikki should have been kicked off weeks ago for the Italian sausage blunder during the tailgate.
