Photo of the Day: Nom Nom Nom, Mojito Cake
At first I was drawn to Erin Nichols' mojito pound cake because of the way the mint leaves were embedded in the creamy frosting (besides that it looks like something I want in my mouth right now), but then I liked it even more when I realized that it kind of resembled a Pac-Man about to devour a slice of cake. Go to Erin's blog, Erin Cooks, to try the recipe, originally from CakeLove: How to Bake Cakes from Scratch by Warren Brown.
