Cook the Book: 'Panini Express'
The featured tome in this week's Cook the Book is one I've been looking forward to trying out since we got it in the office a few weeks ago. Panini Express: 70 Delicious Recipes Hot Off the Press, by Daniel Leader and Lauren Chattman gave me an excuse to do something I've been thinking about for a while now—buy a panini press for the office and get to town making sandwiches for lunch. So for today and the rest of the week, we'll be excerpting one recipe from the book daily and bringing it to you as an overview of the book.
Among the 70 sandwich recipes are some familiar panini and some unexpected ones. And they range from vegetarian options to the range of meats and cheeses. Daniel Leader was one of the earliest proponents of artisanal bread-baking in the U.S. and is the owner of Bread Alone in upstate New York, so the book includes not only panini recipes but a handful of instructions for breads as well.

I love just about any kind of panini. At home, our favorite to make is a cuban sandwich of ham, roast pork, cheese, and pickle. I like to add a little mustard and to squish the sandwich down hard to make is real thin!

It's difficult to beat prosciutto, basil, fresh mozz, and maybe a tomato....then again, roasted veggies with goat cheese are pretty fab as well.

Cuban. One of my fondest memories is eating Cuban paninis (although I just thought of it as jazzed up grilled cheese) on the back porch with my mom, pretending we were old Cuban men and playing dominoes.

A Cuban sandwich is my personal favorite. About once a month we have panini night. This usually happens when there's no more room in the cheese/deli meat drawer in the fridge. Anything goes.

We've been making a panini at home recently that I just love. It's roasted red peppers, goat cheese, grilled onions and provolone.

One of my favorites, though it may sound strange, is grilled cheese with jam or jelly. A nice aged gruyere or sharp cheddar is delicious melted on some toasty sourdough with dijon mustard and just about any sort of fruit preserves.

Got a panini maker for Christmas, and LOVE it!!! Fave right now (and it changes by the week, really) is: procuitto, provolone, salami, basil, balsamic and a drizzle of olive oil on ciabatta. So good.
(However, reading all these comments is giving me more inspiration to experiment some more!!!)

I used to adore these grilled vegetable sandwiches served at my school's co-op. Huge slabs of eggplant, zucchini, tomato, sweet potato, onion, and tomato on sunflower seed bread with mustard - like a salad on bread. They stopped making them, though (in favor of prepackaged, shipped-in versions!?) so I switched to sushi.

The best panini I ever ate was a breakfast version. I honestly can't recall the details, but I remember enjoying it immensely at the time! Since then I've tried many versions which haven't compared, but I do enjoy a grilled veggie and goat cheese panini on occassion.

I believe that the bread you select is the key to making a Great Panini Sandwich whether it is flattened, sliced, stuffed, folded, or wrapped. I follow these simple, but basic rules about the bread I choose and have success with my paninis everytime - and yes, I always us a panini press (as opposed to the fry pay with the foil-wrapped-brick-as-weight method).
Be sure that the bread is:
1) strong enough to hold the other ingrediants inside;
2) dense enough to hold a sauce or oil;
3) large enough to accomodate the ingrediants;
4) of a flavor that complements the inner ingrediants.
I have 3 favorite Panini sandwiches. Please let me know if you want the them, I would be glad to e-mail them to you. My favs are:
1) Honey-baked Ham w/ Shaved Apple Salad - add cole slaw if you wish.
2) Bacon Cheddar on Raisin Bread - savory and sweet at the same time!
3) Roasted Asparague and Sweet Onion w/ Gruyere - absolutely divine.

Hot pastrami that is shaved but piled high, seeded rye with spicy brown mustard on the inside and lightly buttered on the outside (I sometimes mix butter, parmesean cheese and garlic powder for the outside), Swiss cheeese (or cheese of choice or whatever is in the fridge), sauerkraut, and I sometimes add tomatoes.
