Cook the Book: 'Arthur Schwartz's Jewish Home Cooking'
If there are two cuisines Arthur "The Food Maven" Schwartz knows best, they're Jewish and Italian. He's already done an Italian book, so he tackles the likes of latkes, kreplach, knishes, and kugel in Arthur Schwartz's Jewish Home Cooking. If you're not lucky enough to have grown up with a bubbe fussing over you and cooking you some of the most amazing comfort food ever, then this book can help you approximate the experience yourself.
Win 'Jewish Home Cooking'
We'll be excerpting a recipe a day this week as part of our ongoing Cook the Book feature. The first of those will be up shortly, but for now it's time to let you in on how you can enter to win a copy of this book. Simply tell us what your favorite Jewish food item is in the Comments section below.
Winners will be chosen at random from among the commenters, and comments will be open until noon ET, Monday, March 24. The standard Serious Eats contest rules apply.

I would say noodle kugle (and how the hell do you spell that?), but the latkes on the book cover look so darn good. Oh, and charoset. Mmmm. A Hilel sandwich (matzah, charoset, and horseradish)... almost time!

Yesterday my fiance and I went for a late lunch at a Kosher deli in a neighboring town. He had pickled herring in cream sauce for his appetizer and it was delicious. I'll have it next time we go there.

I'm a fan of matzah ball soup. Honestly though, this is dish that can go really wrong really fast. I had one once that has the consistency of a baseball. The rest of the seder was actually really well done though.
I also really like latkes. I can't wait to make them for my daughter, she is going to love them.

Kugel! Sweet noodle kugel, especially. I am not Jewish, but my brother converted for his marriage to my sister-in-law. I got to cook the wedding luncheon, in the kosher synagogue kitchen, under the close supervision of the cantor. Made three kinds of kugel. (I had worked for a kosher caterer for a few years - it's not like they let just anyone wander in and take a shot at kosher food). It remains a favorite cooking memory of mine.
Latkes are a pretty close second, though! I can never decide between apple sauce and sour cream on top, so I go back and forth with each bite.
matriarchy at 10:53PM on 03/17/08
Tzimmis - really, meaty tzimmis, with carrots, sweet potatoes, prunes, etc. Nothing like it, especially for Passover.

No deli sandwich (Romanian pastrami on rye with deli mustard and a side of cole slaw) is complete without the grandfather of pickles, a Guss', a juicy sour, a tangy 3/4 sour, a crunchy half sour... or if you're really feeling brave, a pickled sour green tomato.
And if you can't find yourself a Guss', fahgedaboudit. Head over to the nearest appetizing store and get yourself a Brooklyn bagel with a schmear, pink, salty lox and a chub - a smoked whitefish.

Latkes - not to greasy please (meaning fried uncrowded and in properly heated oil in a heavy pan - cast iron is great here) served from pan to plate.
Blintzes are a close second, just edging out fresh-baked challah.
Really it's all of that along anything from Russ and Daughters here in NYC.
slloyddouglass at 8:57AM on 03/18/08
i have a serious thing for poppy seed hamantaschen (though my best friend's mum once made them with ollaliberries and they were pretty good like that too). also, israeli schnitzel with french fries, hummus, and salad is soooo good/immensely satisfying and can be found, weirdly enough, the world over. i've encountered it in as far-flung locales as the foothills of the himalayas (where it hits the spot after days of hiking) and the LES.
somehow i always wind up "eating out" my favourite jewish foods, I suppose I'll have to hunt up a copy of the book regardless and spend some time in the kitchen fulfilling my jonesings authentically!

As a Nowegian American who has grown up in NYC I have often find myself in the position of "wannabe" when craving Italian food, Soul food and certainly food of the Jewish diaspora. I'm so blessed with many obliging friends whose own heritage has given them a wealth of Jewish dishes to recreate for their family and friends. From Askenazy immigrants to Sephardic Persian Jews as well as Israeli families with a Heinz 57 varieties version of a family tree I've eaten well. One of the things I usually long for is cholent, yes, sometimes stodgy, not elegant, cholent. I love the unctuous ribs, chicken, potatoes, hardboiled eggs and even chick peas and barley my Israeli/American friend adds. When I had my kids she delivered pots of it to my beside!

I would have to say......Farfel, Farfel and more Farfel. When the kids and grandkids come for dinner or we go to their homes to visit, farfel is always requested. Why? It is made up of little pearls of golden egg drop pasta, green peppers, onions, celery and mushrooms baked in the oven with chicken soup to cover until all the liquid is soaked up and the pasta puffs up and fills out.and smells delicious. It goes with chicken, hamburgers and hotdogs, kebobs and even a great rib eye steak. But, brisket would not be brisket without a healthy serving of farfel drenched in the wonderful gravy from the brisket?
There are so many wonderful, soulful traditional dishes in Jewish cuisine, but farfel is right up there bringing both a wonderful taste to the table and a great sense of comfort for all who partake.
Even doubling the recipe, every last morsel is eaten in less than twenty four hours because the little kids and the big kids as well, love to eat it cold or warm as a soul comforting midnight snack.
It's a very versatile dish that people of all ages enjoy. But like I said before, when I make the farfel, they all expect the brisket or burgers or hotdogs and always chicken soup and matzoh balls as well. Coming home to mom or grandma would not be the same without all the aforementioned 'delicacy's. They remind us of both our tradition and our ancestors and what better way is there to keep these thoughts alive than through the food we've eaten for generation after generation..
