How much does Grace love the popular Vietnamese sandwich, banh mi? She declares, "If I could marry a sandwich, I would marry a banh mi." After staring at her photo of her sandwich's innards, I might have to agree with her.

I love banh mi. They usually cost almost nothing. I never would have thought about putting cilantro and carrots on a sandwich but it is great. They put them on really good toasted baguettes with a buttery kind of mayonnaise.
I did become concerned when I looked back in the kitchen where I used to get them and there was a guy squatting on the floor peeling carrots into a bucket.

Yep, it's a fine sammich, the bread being mui importante. We have quite a few shops here in Portland, OR that put together some of the best ones I've ever tasted....it's funny most make baguettes better than our bakeries here. Not big on the mayo though.

I loooove banh mi, and I agree with missginsu that the ones at Nicky's in the East Village in NYC are awesome. Their portobello mushroom one is so good and addictive that I had to recreate it at home because I no longer live in NYC and can't get a decent banh mi around here :(

i would marry one too. i was on seamless web today at work ordering up lunch and was searching desperately for a place that would deliver bahn mi in midtown manhattan. didnt happen. had to settle with a tostada, while it was good, was no bahn mi.

Grace knows where to find the love! We love banh mi too! So much that we have a whole web site dedicated to it! Crazy, but always hungry for a good banh mi!

My favorite bahn mi feaures a pork roll-like Vietnamese cold cut paired with chewy little nuggts of near-candied roast pork, add herbs, chili peppers, optional slices of cucumber and a liberal topping of pickled shredded carrots and daikon.
Lightly toast and you have the sandwich of the gods...
Oh man, I really want one bad -_-

I ate so many of these when I visited Vietnam in the mid 90s. It was the first time I ever ate had a "French" baguette I'm sure. I didn't even recall the name, but seeing that luscious photo has made me so nostalgic that I just might have to try. This was also featured in the Feb issue of Gourmet so the recipe is on Epicurious.
