Cook the Book: 'The Vegetable Dishes I Can't Live Without'

Katzen is renown for having made vegetarian cooking mainstream through her work at The Moosewood Café in Ithaca, New York, and via The Moosewood Cookbook, which was inducted into the James Beard Cookbook Hall of Fame last year.

Do roasted potatoes count? I roast sweet potatoes along with the Yukons, if that helps. If you are going to be strict about it, then roasted broccoli.

La tortilla española (de patatas). Anything that combines egg, potato, onion and olive oil has to be good.

I can't believe it is 08 and I can't believe when I went to college the Moosewood Cookbook had recently come out and the classic recipe I made all the time for groups and still do, is her Spinach Lasagna and the other was the Cream of Spinach Soup recipe.

Does a vegetable stir fry(baby portabella's, onions, broccoli, pea shoots, eggplant, bean sprouts, spinach, leeks,and peppers)count? I honestly could not live without some version of a veggie stirfry in my diet, no matter where in the world I am.....

Steamed zucchini and crookneck squash. Baked Idaho potatoes. Steamed cabbage. Slow cooker carrots and potatoes. Sliced garden tomato sandwiches. Baked acorn squash. What is going on?! It's the middle of winter and I'm now craving summer and fall foods. Not nice. Not nice at all.

My mom's family is Polish, and every Christmas Eve we have a big Polish meal. The idea of cold beet soup doesn't go over too well for most people, so when we borscht-eaters became a serious minority (basically just my mom and I), I learned to make it myself and now I make it every year regardless of how few people will be eating it. It wouldn't be Christmas Eve without it!

Oh my god, I can't live without vegetables, period. (Literally, I guess.) Being Chinese, I obviously love garlic stir-fried anything--Chinese broccoli, baby bok choy, bean leaves... My mom also discovered the combination that is zucchini and mushrooms, and I love Brussels sprouts in all its forms.

Are you joking? No way can I narrow it down to one veg dish. My copy of Moosewood Cookbook is dog-eared and stained, and I'm always on the lookout for new vegetable ideas. I just made The Gurgling Cod's celeriac soup and it was delicious. If only I had a green thumb, I'd have a garden and I'd be even more happy!

Agreed - I could never pick one, so I'll pick something I'm craving right now. Fattoush, a middle eastern salad with sumac.

I LOVE zucchanoes - zucchini stuffed with rice and mushrooms and yummy goodness...

...it's from one of the Moosewood cookbooks...I learned it from an old hippie boyfriend in college and is sooo good....especially when you put the red pepper puree on top. And you can throw anything you want into it really.

I could eat tomatoes all day and every day.

I also couldn't pick just one. in the summer, it would surely be sliced tomatoes with oil, vinegar and salt. fall/winter - baked sweet potatoes, toppings vary on what I have in the fridge but usually include greek yogurt. in the spring, probably roasted asparagus.

I love tomato sauce! So versatile and a tasty.

A simple salad of sliced heirloom tomatoes, with large delicate flakes of Maldon salt, excellent olive oil, and basil chiffonade. I could live on this for most of the summer.

On a chilly night I love butternut squash, peeled, cubed mixed with couple tablespoons of melted butter, a heaping tablespoon of light brown sugar, and liberal sprinkles of kosher salt and pepper roasted until soft and sugar is slightly carmelized.

I used to hate brussels sprouts, and now I love them! I also am a huge fan of leafy greens, chard, kale, etc. I crave them several times a week.

Oh wow, that's a tough question. I think I would not be able to live without chinese cabbage (this vegetable is used to make mak kimchi).

Iceberg lettuce - mostly for its nutritional richness...

Wait, no, it's because the iceberg wedge with blue cheese dressing usually also has bacon in the mix - basically want I really want to do is create a cool, crunchy cocktail composed of water, blue cheese dressing, and bacon.

Given that neither blue cheese dressing nor bacon are not acceptable answers here, I'm going to agree with carusoc and go with broccoli rabe.

Jersey corn and heirloom tomatoes are also high on the list.

I will eat asparagus at any moment as long as its fresh. I hate it out of a can.

First of all, I must say that I LOVE The Moosewood Cookbook. A friend of mine cooks from it all of the time. In fact, when he asks what I might like for dinner, I lean towards recipes in this cookbook.

Secondly, to answer the question...I couldn't live without 1. my grandmother's scalloped potatoes, 2. anything with eggplant, and 3. a fanastically sauteed mushroom. Yum!

Veg I make that I can't live without:
Asparagus sliced thin on the bias and stir-fried in very hot olive oil until wilted but still crunchy, add some kosher salt.

zucchini - LOVE it! Grilled, steamed, baked...awesome!

Believe it or not, we've managed to make brussel sprouts tast absolutely divine--cut them in halve--brown the flat side--turn and add some stock--simmer until soft enough for you--coat with a nice layer of fresh parm and you're ready to go--a bit of crispy bacon doesn't hurt!

Brussel Sprouts-- washed, bottoms cut off, cross cut into the base, and then halved. Toss with olive oil, peeled garlic cloves, salt and pepper.

Dump entire mix onto hot cookie sheet, roast until tender-- the sprouts will be golden and sweet, the garlic will be soft and delicious. Mmmm.

Also-- microwaved Spagetti Squash (Great for reduced carb meals in the evening)-- halve a squash, pour olive oil, salt and pepper in the middle. Microwave until soft. Scrape out strings of squash, top with pasta sauce and really good parmasan cheese. Mmm.

Salad rolls too--

So easy, so good! Take a spring-mix, mangoes (a must have), red onions, red peppers, carrots, avacado and cooked, cold vermachelli noodles. Wrap in rice-paper, and serve with a dressing made from soy sauce, peanut butter and a spash of hoisin. Fresh fresh fresh! Add tofu or chicken for extra protein.

So many! But I'll list salt and slush stew here as my vegetable dish of choice lately - it's a delish mushy stew of potatoes, carrots, turnips and mushrooms.

Oh, too many! I love vegetables! Zucchini, soy beans -- most beans actually, brussel sprouts, squashes, sweet potatoes, and more.

I eat peas with pearl onions whenever I can. They are my favorite alongside any meat or starch. Fresh green beans are a close second. I like asparagus in the summer from our garden, but eating too much makes sticky urine, so my answer is the available year round, frozen peas with pearl onions!

I don't know what to call it in english... (sounds like yuo choy in cantonese) It's a dark leafy green, often with little yellow flowers. the way we've always had it is quickly blanched in oily salted water, then drizzled with oyster sauce. tastes perfect with white jasmine rice.

My veggie dish to die for is: Veggie chili! I actually prefer vegetarian chili loaded with fresh veggies, black beans and ancho chili peppers over any other kind. And if you smother it all over a veggie burger I'm comatose with happiness for days.

Such a difficult question! I would say zucchini fritters or eggplant and potatoes with fenugrek. The only problem is that I'm the only one in the family who loves eggplant.

I have never met a vegetable I didn't love, but my all time favorite dish is a simple greens salad with tomatoes and cucumbers and a nice light dressing!

I love acorn squash, butternut squash, mushrooms sauteed, spinaxh with garlic, broccoli rabe with garlic and salad with avocados, onion and tomatoes.

Salad. I eat it every day and it's always different depending on what vegetables (and fruits) I have and feel like eating

Cooked greens, southern style... Mustard, turnips, collards, all of 'em. None of this lightly cooked stuff for me. Cook the heck out of them, like my granny did and don't forget to throw in a chunk of fatback to make 'em smoky. Serve up in a shallow bowl so you get the pot liquor and douse with peppery vinegar. Add piece of cornbread, not sweet mind you, and you've got a piece of heaven in your hot little hands.

I love mashed potatoes. I worked at a restaurant about 15 years ago, and at that time, they had a recipe for their mashed potatoes that I loved. Cream cheese, sour cream and onions combine with mashed baked potatoes. Delicious! I try to incorporate them into many of my meals. YUM!
