Do you know where you're getting your turkey this year? Not yet? Then we've got a contest for you! The good folks at D'Artagnan are providing us with a turkey a day to give away to one lucky Serious Eats reader from today until Sunday, November 18.*
D'Artagnan is a purveyor of many things deliciousfrom pâtés to sausages, foie gras to wild mushrooms, game meat to truffles. But what we're especially interested in right now is their turkey.
D'Artagnan's certified organic birds are fed organic grains and pure spring waterno protein supplements, added poultry or fish byproducts, pesticides or herbicides. Additionally no antibiotics, no growth hormones. The result is a poultry with great flavor, tenderness, and a 25 percent lower fat content than standard commercially raised turkey.
We will be giving away 12- to 14-pound organic free-range birds for the duration of the contest. Contest open only to participants in the continental U.S.

take the carcass, pull off the meat and make turkey stock. Then turn some of that stock into soup with the addition of carrots, parsnips, peas - whatever vegetables I deem appropriate. Shred the turkey meat, toss in some barley, simmer till all is tender and voila!
The leftover stock freezes beautifully, by the way.

Take a corn tortilla and warm it (for tastiest results, heat it briefly on both sides on a griddle with a little bit of butter or oil), then add leftover turkey, a spoonful of mashed potatoes, and a dollop of cranberry sauce. Roll it up and devour.

I absolutely love turkey sandwiches, but they have to be made correctly. I take some good white bread and spread on a liberal layer of mayo. I usually make homemade mayo just for this occasion. Sometimes I add bacon and/or lettuce. Now I'm getting hungry...

Pepper-corn Turkey Salad for my husband, cold turkey sandwich with leftover sausage stuffing for me. This is the greatest holiday for me, the working mom, because cooking one Thanksgiving meal means many more days of delicious food (thanks to leftovers) without having to cook!

Layered in a custard cup (or if you're eating it in bed, a coffee mug) with mashed potatoes, sweet potatoes, stuffing, and gravy. Nuke. Top with cranberry sauce. Repeat as necessary.

The day after Thanksgiving is my favorite food day of the year. I bake a loaf of bread, heat up turkey, mashed potatoes, gravy, and stuffing, and put that on a sandwich with mayo and cranberry sauce. Best thing ever.
Also, my wife makes a ridiculously delicious turkey soup.

No question, it's creamed turkey on toast. My Mom always made it. The word creamed is missleading because there was no cream involved,it's just cut up turkey,broth (homemade or canned) thickened with cold milk &cornstarch, or you can make a roue with turkey drippings and flour, a little salt &your done. Put on toast. Simple but divine.

Why..... "Leftover casserole," of course! We take any post-feast ingredient left and layer in a divine combination...turkey, gravy, green bean casserole...etc...always ending with mashed potatoes on top for a crispy, buttery crust. You'd be surprised how a hidden layer of cranberry sauce really livens up what one would think is a gut-bomb of a dish. Can't wait!

i like to stuff a turkey with onions and celery then smoke it for about 12 hours, for leftovers, turkey gumbo with andouille sausage is mandatory.

I like to boil the carcass just to the point where all the meat is off and it's really clean. Taking my time, I dry it out thoroughly and paint the bones a bright color, using about five coats of a high gloss latex. Then, out comes the sewing machine and glitter gun to produce little outfits for it to wear during the holiday season. Coming up with new ideas year after year is a real challenge!

Ever had Vietnamese congee (chao ga) served with chicken salad (goi ga)? I used to eat this a lot as a small child. turkey barley soup - boil the carcass for stock, add leftover veggies and barley - and a drop or two of carrot oil and chopped fresh herbs really brighten it just before serving.
