Cook the Book: Vegetarian Suppers

cover-vegetariansuppers.jpgWhen it comes to satisfying, full-flavored vegetarian cooking Greens Restaurant founding chef Deborah Madison is everyone's go-to person. So who better to write the book on hearty, filling vegetarian suppers than Madison. Even a devoted carnivore like me was drooling with anticipation after leafing through Vegetarian Suppers from Deborah Madison's Kitchen. Dishes like the sweet potato gratin with onions and sage, the pasta and chickpeas with plenty of parsley and garlic, and the eggs baked on a bed of sauteed mushrooms and croutons, will make your mouth water.

Thanks to the good folks at Broadway Books, we've managed to snag five (5) copies of Vegetarian Suppers to give away. Just tell us what your favorite vegetarian main dish is. I would have to say a really beautiful vegetable tagine with all different kinds of vegetables - onions, sweet potato, chard, cauliflower and couscous cooked in broth. Although, a big bowl of udon noodles and veggies is great too. There are a lot of amazing veggie dishes out there.

As a former vegetarian who still enjoys eating meatless most of the time, it would be hard to name one favorite vegetarian main dish. I love hearty vegetarian meals where no one misses meat -- a rich risotto featuring a seasonal vegetable or a big pot of bean chilli with cornbread. Those are two favorite vegetarian meals!

Funnily enough, my favourite vegetarian supper is from another Deborah Madison cookbook - the Greens Cookbook. I love the mushroom lasagne. With its mixture of fresh and dried wild mushrooms, and lovely creamy bechamel it really is a hearty winter supper.

KitchenKore is right--sometimes nothing satisfies like a big pot of bean chili with cornbread. That aside, I love roasted eggplant and zucchini.

Right now, I'm eating a fantastic savory oatmeal with blue cheese, pears, slivered almonds, and vegetables. Let's just call it my favorite vegetarian main dish of the moment. :)

Rice and beans

I'm a sucker for a vegetable stir-fry - zucchini, string beans, and mushrooms - in teriyaki sauce with a little pineapple, and tempeh. Warm, spicy, crisp from the veggies, rich from the tempeh, with just the right sweetness. Shiratake noodles for extra oomph.

One of my favorite vegetarian main dishes is Deborah Madison's green lentils with wine-glazed vegetables. Oh, it's so good. Nigel Slater's vegetable curry is a close second.

A pasta salad loaded with seasonal vegetables (a very high ratio of veggies to pasta) and dressed with good olive oil and sea salt.

It's a tough question to ask. there'll always be different foods or flavors I crave at different points of my life, but the only constant in the chaos of my foodie desires are simple leafy greens (spinach, swiss chard, etc.) sauteed in garlic and olive oil. So satisfying and healthful. :)

And yes, I do eat just leafy greens as a main dish....

Also a former vegetarian who still often goes veggie by choice. One of my favorites is Moroccan-spiced vegetable stew with chickpeas, squash, zucchini, tomatoes, carrots, chard, and lots and lots of spices.

My favorite (especially in cold weather) is portabella mushroom chili - YUM!

Vegetarian Masaman Curry is probably my favorite veggie main dish....with lots of potatoes, carrots and onions - it has that great comfort food feel - especially served over Jasmine rice.

My favorite go-to meal (that always satisfies) is veggie sausage with sauteed garlicky greens and cheesy polenta.

Dang! I can't believe someone already wrote in masaman curry. That's my favorite - with fried tofu, potatoes, cashews, and snow peas.

deep fried tofu skin tossed with edamame, mushrooms and crunchy bean sprouts with pan fried pearl noodles.

Mushroom risotto with scallions and a mountain of parmesan, but I would be remiss if I didn't mention that for meat-eaters, this dish is definitely enhanced by bacon. I echo Tyler Florence (and probably countless others) when I say that bacon really should be an honorary vegetable.

i LOVE fried okra!

homemade wheat gluten, chicken-fried style, with mushroom gravy & mashed potatoes. an open-faced sandwich yum!

I make a thai red curry with coconut milk, sweet potatoes, green beans and smoked tofu that drives meat-eaters wild! The smoked tofu is key... the texture and flavor is (to me) much more enjoyable than regular squishy water-packed tofu. I've converted lots of soy-haters with this recipe!

Cannelini beans & rapini, with chicken broth, lemon juice, hot pepper flakes, and parmesan cheese. Actually just finished having this for dinner.

I really like a nice vegetable stew on a bed of cheesy polenta.

Just one? It changes all the time, but right now I'd have to choose stir-fry with pasta.

I am a meat eater married to a vegetarian and I need HELP!!! Would LOVE to have this. I like a big bowl of curried vegetables and noodles. Mmmmm...

Favorite? Not having eaten any red meat for 30 years (half of that time no meat at all, including fish and fowl), there are countless favorite veggie meals. I'd have to echo an earlier comment - any meal where others share and nobody, including the most carnivorous, "miss" the meat.

I can't pick just one (thank god, since I'm veg). Right now, I'm particularly craving a roasted butternut squash, garlic and wild mushroom frittata; last week, it was chestnut risotto. What can I say, I like carbs.

Channa masala, wild mushroom tart, margharita pizza, good bread and cheese, carrots and hummus, grilled cheese and soup, veggie chili, any kind of fresh pasta...
the list goes on and on. i'm a vegetarian myself, so one would hope there are a lot of vegetarian main courses that i like!!

Wild mushroom & herb risotto

Risotto
Polenta
Soba noodles with mixed veggies
Veggie lasagna
Tomatoes, buffalo mozz & basil
WIld rice and sweet baby peas

Here is one of my faves. It is simply lovely.

Mushroom Goat Cheese Lasagna

Yield: 8-10 servings
Time: 1 hour 30 minutes

2½ pounds red or Yukon Gold potatoes, quartered
salt
2 T butter
¾ c milk
6 oz fresh goat cheese
black pepper
3 T plus ½ c olive oil
1½ pounds fresh mushrooms (Portobello, shiitake, oyster, and/or chanterelle), chopped
4 gloves garlic, minced
½ oz dried porcini mushrooms OR 1 oz dried shiitake mushrooms, minced
¾ c Marsala or Madeira
1 c red lentils
1 c sour cream
½ c Parmesan, grated
1 c fresh basil
6 whole green onions, chopped
2 T lemon juice
1 pound fresh lasagna noodles or dry noodles, cooked

Boil potatoes with water and salt about 15 minutes, until tender. Drain and mash with butter, milk, and half of the goat cheese. Add salt and pepper and set aside.
Meanwhile, heat 3 T oil over medium heat, add fresh mushrooms, and sauté until golden, about 5 minutes. Add 3 cloves garlic, sauté another minute, then add dried mushrooms, Marsala, salt, and pepper. Set aside.
Boil 2 c water with lentils, cook five minutes until tender, set aside.
Combine sour cream with remaining goat cheese and half of the Parmesan, set aside.
Preheat oven to 375.
Oil the baking dish, then line with lasagna noodles. With the slotted spoon, sprinkle mushrooms evenly over noodles, then top with noodles. Spread on the mashed potatoes, then more noodles. Add sour cream, then lentils, then another layer of noodles. Cover with foil and bake for 45 minutes.
Just before the lasagna is done, combine basil, green onions, and remaining garlic in the blender. Slowly add ½ c olive oil, then lemon juice, then 2 T water. Season with salt and pepper and spoon onto dinner plates.
Sprinkle remaining Parmesan over the lasagna and cut into squares. Place a serving on each plate, and serve immediately.

This recipe seems complicated, but in fact it just has a lot of ingredients and mixtures set aside all over the kitchen. As long as you have counter space and lots of dishes, you shouldn't have any trouble.

Hmmm, so difficult! Japanese curry with onions, potatoes, and peppers over rice, most any Indian vegetarian dish (esp. those involving lentils or chickpeas), hearty bean and pasta soups (I'm currently living in Italy, and my host mother makes a mean vegetable minestrone), and anything sinfully cheesy (my actual mother makes an amazing sourdough bread pudding with gruyere, swiss chard, and plenty of eggs and cream).

It probably changes weekly, but right now I'd have to say hummus and tomato with a warm, freshly baked pita.

My favorite vegetarian meal ..........a veggie-filled minestrone soup , whole wheat garlic bread , whole wheat pasta with tomatoes, peppers & onions and a side salad .

My favorite veggie meal changes all the time! Currently it is a homemade ravioli stuffed with ricotta, parmesan and spinach that we made recently. Served with a salad and homemade focaccia bread, of course!

My favorite vegetarian meal is one my husband requests over and over again: pinto bean burgers. They are spicy, good texture, and satisfying. We eat these on whole wheat buns and serve with side salad and fruit.

Veggie lasagna - mushrooms, olives, spinach and lots of cheese! Yummmmm...

There are so many! If I have to choose one, I guess it would be a simple lasagna with home made pasta.

Eggplant parmesan - especially when the eggplant is unbreaded.

My wife makes a mushroom galette that, now that I think about it, she may have gotten from another Deborah Madison cookbook. We use Vegetarian Cooking for Everyone a fair amount (for sides, at least). Anyway, it's very yummy: rich, filling, decadent.

Ah, my favorite is a mushroom stew on mashed cauliflower with spinach. It's from a Dr. Joel Fuhrman book. Yummy! I'd love this cookbook - in a big need of something like this!

General Tso's Bean Curd

Hmmm, hard to say. My husband is a vegetarian so we eat veggie most of the time. I'd have to say vegetarian chili or polenta with mushrooms and red peppers. Mmmm... of course, I'd probably say something different when it's less cold out.

Before really first-rate tomatoes started to become scarce in these parts, I was hooked on a typically simple Mark Bittman recipe (if you can even call something so basic a recipe!) Paella with Tomatoes (NY Times, Sept. 5th, '07).

I’ve been vegetarian my whole life, so it’s really hard for me to pick just one dish as my favorite! Hmmm…I would probably have to pick my mom’s sambar (a South Indian lentil and vegetable stew), and coming in close second is Thai red curry. Eggplant parm comes in third. OK, I have to stop now before I list everything I love to eat!

Unfortunately I don't have one right now. However, since our 21 month old seems to prefer fruits and vegetables to meat (yes other parents, you can hate me now) I'm looking to begin cooking more vegetarian fare for his enjoyment. Plus, how bad could that be for mom and dad?

Pasta with marinara.

Given that I eat almost entirely vegetarian, I have tons of favorites. Currently topping my list? Panade, a warm, gooey baked combination of cheeses, chard, broth, and day-old bread cubes. Also high on my list is pretty much any kind of pasta.

This time of year, anything with butternut squash, like a thick soup or just roasted squash with any of a number of seasonings. I'm also quite partial to the various Japanese noodle soups -- udon, ramen, etc.

Hi, I have been a vegetarian for as long as I could make my own eating decisions. There are many reasons behind my choice. Bean and cheese burritos. Simple. Tasty. Easy. I certainly can't eat them all the time, but I'm never disappointed when I do.

Mm, hope I win. My favorite would have to be the pecan cheese koftas I had at a local cafe. Has to be topped off with the same pear tart and coconut ice cream too.

Lately, my family and I have been living on tofu stirfried with lots of garlic, then tossed with lemon juice and soy sauce. It is simple, delicious, and when combined with veggies and udon noodles, it is a meal we can eat over and over and over.

When I left the south I had no idea that tofu was going to figure so largely in my future. yum yum

My favorite veggie main dish is definitely either Veg Chili or the "Chicken Cheese Steak" from Govindas in Philly! Its so amazing.

Falafel in whole wheat pita bread with spicy tahini sauce, pickled turnips and fried eggplant slices. Yum!

Vegetarian Stuffed Cabbage Rolls in a sweet and sour tomato sauce. You don't even miss the meat!

Spicy Lentil Soup or Black Bean Chili...although Peanut Butter Noodles come close.

Any kind of dal is a staple in my vegetarian kitchen. I loveDeborah Madison!

Nothing beats a good veggie burrito with guacamole and pico de gallo for my money. Or a navratan korma. Or veggie taro chicken a la king. Or really vegetable-coated pizza. I really like most vegetarian foods, so I'm quite easy to please.

Gosh, just one? It totally depends on my mood and the season. I do love Vietnamese-style spring rolls filled with tofu and vegetables, served with peanut sauce.

hungry's cafe in houston has a great grilled portabella mushroom on top of a bed of spinach, tomato, and feta. i think the portabella mushroom has some balsamic vinagrette on it. *drool*

I have so many "favorites" but I'll go with the old standby, vegetarian lasagna... so good.

A fantastic bruchetta with grilled eggplant and melted fresh motz. Top that off with diced fresh summer tomatoes, fresh garlic, just picked basil and olive oil. Yum!

If it's the summer, a good homemade greek salad, and fresh bread!

This time of year it's chunky veggie stew. Up until a few weeks ago it was orzo with roasted veggies.

Cheese ravioli tossed with broccoli, sauteed mushrooms and pesto, then sprinkled with freshly grated parmesan cheese. It's my favorite vegetarian dish and my favorite no-time-to-cook meal!

I don't have a favorite vegetarian dinner! I'm desperate. My daughter is turning vegetarian and I'm totally at a loss for what to cook for 2 1/2 appetites. Right now her favorite is macaroni and cheese but we need something else, something not so starchy.

Aloo Chole (Indian Chickpea and Potato dish). Done right, it's incredible. Aloo Chole. Wow.

Just about everything I eat and cook is vegetarian. But, I guess some of my favorites, particularly since I simply stink at cooking them, are Indian vegetable curry dishes. Spicy, complicated, hearty, magical.

i'm fairly certain this has been my answer for other contests, but what can i say, its one of my favorites - pasta with chickpeas, tomato, spinach, dill and lemon

A chopped vegetable salad, perfectly cut so that each vegetable is the same size, with a creamy balsamic vinaigrette.

A favorite would be a quiche made with sharp cheese and broccoli with some red bell peppers for a flavor and color accent.

These days I go for a potato gnocci with browned butter and nicely fried sage leaves.

That's a hard one! Probably a spinach lasagna or white bean chili with cornbread. Or maybe a bowl of greens with mushrooms, olives, and a good oil. Then again, that Mushroom Goat Cheese Lasagna above looks pretty tasty too! :)

I'm trying to cook more vegetarian dishes, but my success rate hasn't been that great. So far, my forays into vegetarian cooking have been most successful with: Pea and potato curry, Pinto-bean mole chili, and Lentil curry soup (although I'm still looking for a good recipe for the latter). But my all time favorites is still Jamie Oliver's Quesadillas made with fresh salsa and guacamole.

My favorite vegetarian main dish is vegetable lasagna, made with zucchini, carrots, spinach, and whatever other veggies I can sneak into it!

I found a recipe for curried butter beans with mustard greens over rice that I can't get enough of. I could eat it every meal every day.

Yum!

Any kind of hearty roasted vegetable soup, with crusty bread and maybe some cheese. Mmmm.

I make a variation on Pasta and chickpeas about once a week. This one looks great. I'd substitute the gross and slimy chickpea water for some vegetable broth though.

I have a sweet tooth, so butternut squash ravioli with sage and a brown butter sauce always has me salivating

By far, my favorite is kale salad over freshly steamed brown rice with a tahini-ginger dressing. To the kale I like to add grated beets and carrots, chopped apple, toasted sunflower seeds and avocado. I eat this at least once a week, with variations on the add-ins.

It's actually a tie for me-- either the delicious tofu stir-fry from my local Chinese restaurant, called Buddha's medallions where they use the softest, most creamy and delicious tofu in a veggie stir-fry with copious amounts of garlic and ginger, or the potato rolled tacos from my local taco shop with a hefty amount of lettuce, tomatoes, and guacamole on top.

My sweetie makes a dynamite spinach lasagna -- tremendously yummy. I must admit that I am also a sucker for a good eggplant parmigiana.

Heck, I'd be happy with a plate of green salad, big heaps of fresh babaganoush and hummus and a pile of toasted whole wheat pitas.

Just this weekend I made Deborah Madison's Really Good Mushroom soup, which turned out to be even better than "Really Good". It's my new favorite soup, and it is so rich and hearty that it is definitely a main dish.

Pasta of any type, but my favorite is fettucini with artichoke hearts, kalamata olives, red pepper flakes, fresh herbs and feta cheese.

Buddhist Chinese with seitan and other meat substitutes. I don't make it, but I love it. Also nachos, veg moussaka, veet and stuffing casserole...

Falafel in a warm pita with lots of tzatziki and hummus. I asked for a food processor for Christmas so I can start making my own hummus!

Fettuccine, a little butter, parm.....and shaved white truffles.

A delicious eggplant pasta. I add just a bit of honey to the sauce and that seems to make all the difference.

My favorite vegetarian dinners are often two dishes that might otherwise be classified as "sides" put together, or a hot vegetarian dish with a cool carrot slaw salad. The ones that I crave over and over again are Orangette's Braised Winter Greens with Chickpeas, Onion, and Garlic made with lacinato kale, and a Turkish bulgur and lentil pilaf with allspice, tomatoes, and mint. Both are incredibly tasty, and I nearly always end up eating the leftovers for breakfast the next morning...

I love my easy cheesy orzo -- orzo in a homemade creamy cheese sauce with canned tomatoes, pease, and lots of garlic. So simple and so good.

Such an international combination, with the reputation of becoming a complete protein as well; you can't beat the versitility of this dish... Vary the basic ingredient varieties and experiment with the spicing, nothing comes out so satisfying as Beans and Rice!

My favorite vegetarian dinner, the one we make again and again, is a Moroccan chickpea tagine.

we just finished having white bean, sage and eggplant gratin from the Greens cookbook. the best part is the wonderful smell of sage and garlic when the beans are cooking. oh, and the crispy topping of breadcrumbs and parmesan cheese

Since I have spent so much time in Spain, I would have to say a tortilla española (tortilla de patatas), the ubiquitous potato and onion omelet found everywhere and eaten at any time of the day.

Indian Potato Curry with Basmati Rice and Yogurt with Mint

Since I love vegetarian food, it's hard to pick a favorite, so I'll choose the most recent: Deborah Madison's Mushroom Flagstaff, from The Savory Way. They're a lighter take on the Vegetarian Epicure's Mushrooms Berkeley, which was a favorite in my college years.

Roasted veggies, because they get crisp and caramelly.

One of my favorites right now is a Madhur Jaffrey recipe for chickpea and beet green soup with lots of rosemary. It is almost not a main dish but I eat it as one with some fresh bread.

Steamed veggies, tofu sesame tofu and soba with peanut sauce. Best with a handful of cilantro, green onion and squeeze of lime on top.

My favorite vegetarian meal has got to be Macaroni and Cheese accompanied with a simple green salad and a cold beer.

My favorite vegetarian meal is very simple: angel hair pasta with fresh, ripe summer tomatoes, garlic, basil, parmesan cheese. Heaven.

Oh good lord, how in the world can I answer that? Eggplant parm is always a winner, but I like just about all vegetables prepared well. At Thanksgiving dinner my favorite veggie dish was the Brussels sprouts with caramelized shallots.

My favorite vegetarian dish is a Korean bean curd stew.

We call it "Squeaky Cheese Pasta". We prepare the hallumi cheese skewers from Delia's Smiths Summer book (cheese, red and yellow peppers and onions marinated overnight in LOTS of herbs with a little lime juice and oil then grilled) and serve it over fresh pasta. Great for dinner and even better as a cold salad for lunch the next day. Squeaky cheese because the hallumi kind of squeaks in your mouth when you eat it!

tofu veggie stirfry with homemade peanut sauce. the sauce uses peanut butter, very hot red peppers, fresh grated ginger, and low sodium soy sauce. soooo good.

Any vietnamese dish doesn't require meat for me.. so fresh and flavorful.

Favorite and simplest veggie main dish is baked tofu, usually with Honey-Mustard sauce or BBQ Sauce.

Definitely want to try tofu but I have eaten veggie burgers and also alot of pasta...this would help me to continue being a vegetarian which I started after Thanksgiving!!! ;-) Love ANIMALS!!!!
