Zuni Roast Chicken Update

This morning I went to my local Fairway Market and bought a a three pound organic chicken. I brought it home, rinsed, dried, and salted it, put the herbs under the skin, and put it in the fridge loosely covered. I then took everyone's advice and bought a ten inch skillet with a metal handle to cook the chicken in. Also in response to the many comments on the subject, I'm going to make the bread salad to go with the chicken.

Tomorrow afternoon I'm going to make the bread salad and cook the bird. I can't wait to see how it goes.

Good luck with the Zuni chicken! I made it and it turned out very well - the salting in advance really seems to work wonders. I didn't make the bread salad but surrounded the chicken with sliced potatoes which soaked up some of the juices and fats from the roasting bird.

i've maade this recipe, it's wonderful and worth the effort. enjoy

picked up a 3 1/2 pounder at the farmer's market yesterday, smallest I could get. salted and herbed it. going to cook it tomorrow after work.

Salting the bird in advance & inserting the herbs under the skin is definitely the way to go. Good luck! chefjp
