Which Corn Tortillas Are Best?

There's nothing quite like a fresh made tortilla, but if you've got to use one that's pre-made, this week's Taster's Choice panel over at the SF Chronicle's says Trader Joe's thin corn tortillas reign supreme over a field of thirteen. The judges said they "were "pliable and supple," if a little "flaky." And they had a "decent corn flavor" with "nice browning on the side." Mission's white corn and yellow corn tortillas took second and third place respectively; Trader Joe's thicker corn tortillas scored at the bottom of the pack, interestingly enough, along with Ranchero's.

I haven't had TJ's but Whole Foods sells some that are thick, flavorful and have more soul than the usual rubbery stack you find. But they're SO EASY TO MAKE! Seriously! All you need is a tortilla press, a skillet and a bag of masa harina. I make mine homemade all the time now, and it only takes about ten minutes longer than if I didn't.

I make mine now at home from scratch all the time too. Once you get the hang of it, they are really easy to make, as Ms. Homesick Texan says.

BTW, the tortillas at TJ's in California are higher quality than those in New England. I bought some at a TJ's outside of Boston a few months ago and was warned by the clerk in the store that they weren't as good as the ones I get at home in CA. The clerk was right. They were thin and somewhat fragile. They practically tore apart when I was making quesadillas for some friends.
